Before you suggest solutions for bucket fish detection, you also need to get or keep the fish back in the bucket! :-)

You could dispense the fish out with water and then it drops onto a pressure plate or tripwire and gets picked up by another dispensor

Perhaps you could do something like what people have mentioned where a dispenser fires three times, but replace the dispenser with you AFK with an autoclicker. So, have an autoclicker set up to right click 3 times into a 1 block space through an enchanting table and then press Q (or whatever you have as the drop button), a hopper below you to collect the items you drop, a dropper to give you a new fish or water bucket every time you drop an item, and a piston to remove any water from the 1 block space every time you drop an item. This should convert all water buckets to empty buckets while keeping the fish buckets as fish buckets, and then the empty buckets can simply be filtered out and fed back into the farm, since empty buckets are stackable.

Haven't watched any hermitcraft vids passed this, so don't know if a solution has arisen for the water bucket problem, but you could have it so buckets are dispensed on a pressure plate: if there's a fish it'll power the plate and visa versa. Hope this helps (if help is still needed) ☺️

For your fish problem, why don't you just power a hopper so only 1 bucket is in the dispenser at a time? Then just have an empty bucket filter pulling the empty buckets from the dispenser. You could put this facing a bubble column that recycles into the farm's input. Set the timings so the filter will try to pull before the dispenser can dispense, and you have all 3 conditions met: 1. If an empty bucket finds its way into the system, it will immediately be pulled and won't clog anything. 2. If a water bucket is put in the dispenser it place the water and the bucket will be pulled from the dispenser. 3. If a fish bucket is put in the dispenser it will put the fish in the bubble column to feed into the farm's input and the bucket will be pulled from the dispenser. When a fish is placed in a bubble column it takes a second for the bubbles to launch the fish upwards, so you'll need to add a delay to prevent the fish from being scooped up again. Although you might be able to fit a comparator next to the dispenser so you can prevent another item from going in the dispenser if one is in there already (i.e. if the fish got scooped up again due to lag).

You could use compression to normalize the sounds of your recording so that the dB level stays the same for all hermits regardless of their volume. For your recording that is.

Will that let matching items through or will it block it because they don't stack? Sorry, my computer is being stupid so I can't test it for now.

Is it just me or does the proximity audio seem to be rather bandlimited? It feels like in all the demos I've seen from the hermits, the other ones are sounding rather muffled.

I love the block palette for your fish shop! The colours compliment each other and hints at a tropical feeling, like Iskall and Mumbo's Pacific.

This mod is a nice addition to Hemitcraft. imagine playing hide and seek in Hemitcraft or even just meeting other hermits can be a nice thing. greeting them and so on

What texture pack does he have on his armor

I just want to mention something regarding the audio volume issue. There is generally an intermediate layer between the original system sound and captured system sound inside capture software. It's likely the capture software is trying to do some type of audio balancing. For instance, it might be reducing the volume of system sound to insure the microphone volume is audible. Ideally, you'd output the Discord audio to a separate virtual audio channel and have it mixed with the actual system sound to produce speaker/headphone output. That way your capture software (if it supports it) can create three channels of audio: microphone-in, discord-out, and system-out. If your software doesn't support that, try to disable audio balancing or use raw system audio.
